Spiced Apple + Persimmon Galette


5 small persimmons

2 granny smith apples, peeled and cored

juice of 1/2 a lemon

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground allspice

pinch of ground cloves

1 teaspoon vanilla extract

1/4 teaspoon kosher salt

1/4 cup brown sugar

3 tablespoons sugar




Preheat the oven to 400 degrees. Slice the persimmons and apples about 1/8" thick, place them in a bowl and toss them in the lemon juice so that the apples do not brown. Mix in the next nine ingredients, tossing them gently with your hands to avoid breaking the fruit. Roll out a single pie dough to roughly 14" in diameter, then place on a greased baking sheet. Arrange the fruit in a circular formation, alternating in color, leaving a 2" border of dough. Cut the butter into small pieces and scatter over the fruit. Fold over the dough edge. Bake the galette on the middle rack of the oven for 45-50 minutes or until the crust turns a golden brown. Allow to cool and serve.
