Ricotta Tart with Orange + Ginger


2 cups ricotta cheese

4 ounces cream cheese, softened

2 large eggs, whisked

1/2 cup sugar

2 tablespoons orange zest

3 tablespoons orange juice

2 tablespoons ground ginger, divided

1 Single All Butter Pie Dough

1/4 cup orange marmalade, for garnish

orange slice, for garnish


Preheat the oven to 375 degrees. Mix together ricotta, cream cheese, eggs, sugar, orange zest and juice, and one tablespoon of ground ginger in a large bowl with a large whisk, making sure it's well combined. Roll out the pie dough into a thin circle (about 1/8" thick) and dust with the other tablespoon of ground ginger. Place the dough into a greased spring form cake pan, and prick the bottom with a fork about 15-20 times. Pour the filling into the pie dough. Bake until the filling is set, about 35 minutes. Allow to cool for 1-2 hours. Heat the marmalade in the microwave for about 30 seconds, stirring it to loosen. Pour onto the middle of the cooled pie and add a thin orange slice for decoration.
